my love for iranichai is as generic as any hardcore hyderabadi would have. iranichai is more or less a synonym of hyderabad's cafe culture. my passion for business got weight when this concept struck me when I had to take a frend of mine for a cuppa irani chai. she loved it but got a bit concerned about the hygiene factors. Thanks to her that I have now opened my dream project- Cafe Irani chai. We worked on this concept for two years trying to test the pulse of the fellow hyderabadis and opinions that matter. Initial ideas was to start a chain of cafe but the research on the olden days of hyderabad and the love of hyderabadis for food had gave us a reason to start food also. Now hyderabadi food is a gift of the great Nizams. A saying in hindi - apna khana mohabbat aur fursat se banntha hai(hyderabadi food is made out of leisure and love for it) shows the Nizam's love for food. We got fascinated by thier receipes and thought we should bring back these great cuisine to life and gift the same to world.
From haleem to pathar ka ghosht, irani chai aur osmania biscuit to biryani, Cafe Irani Chai is the place for a true blue hyderabadi.
Irani Chai recipe- The making of this chai is a process which needs patience. This chai cannot be made in small portions. The minimum numbers that needs to be made is for 25 people and the milk and chai decoction is boiled for long time. The tea powder that is used is not available in the market but can be sourced out if you know any of those irani migrants. The tea seeds are processed entirely different which gives a completely different aroma for the chai.
tea powder- 25 tea spoon
sugar - 350 tea gms
milk cream - 100gms
milk- 10 lts
mix the tea powder and 250 gms sugar with water and start boiling the water in low fire. at the same time add the milk cream and 100gms sugar to the milk and put the milk under low fire. the milk needs to be stired continuously for couple of hours till the milk gets thick. one cup need 1/4th of decoction and 3/4 th of milk to make your irani chai.
